A quick & healthy lunch that you can prepare at work!
Cut up your favourite vegetables. Avoid veggies that take a long time to cook like potatoes. Here, we have used office cooking friendly vegetables like Zucchini, Carrots, Green beans, Pumpkin & Capsicums. Other options include Cauliflower, broccoli, Cabbages etc.
Transfer all vegetables into a microwaveable vessel. Easy to use and store away at work is a Pirex glass container. Mix your cut veggies with some cherry tomatoes and parsley. You can use your standard tomatoes also.
Top up your vegetables with some cooked & packed Quinoa and Brown Rice. Add soe mixed herbs, turmeric, a bit of Olive oil, salt, pepper, a bit of water and pour about 5 tablespoons of Coconut milk. Mix everything well together.
Microwave the container for about 5 minutes. Be careful when you take it out as the vessel can be hot. Cover it for about 1-2 mins so that the steam cooks the vegetables a little bit more. That’s it! Transfer to your eating bowl, top it with some chopped Cucumber and enjoy! It’s good to have the veggies slightly raw as the crispiness adds to the flavour. You don’t want it all soggy. If you are into raw eating, don’t microwave it and just have it after Step 3.
